The temperature sensors used in solar thermal systems are typically platinum 1000 resistance thermometers or PT1000s. These consist of two wires which are joined inside a protective sleave to a piece of platinum wire. The platinum wire has a resitance of 1000 Ohms at 0 degrees C. As the temperature changes the resitance of the platinum wire also changes. It is this change in resistance that the connected controller monitors to calculate the temperature of the sensor.
